Asparagus Soup

Ingredients:
250g of White and/or Green Asparagus
50g Butter
5-6 tbs. Cream
1 cube of vegetable stock
Pepper
1 tbs. Whipped Cream

Wash and peel the asparagus. Cut off the heads and the end/hard stalks of the bottom. Heat the Butter in a pan and cook the asparagus for 8 minutes until soft. Take the asparagus heads out of the pan and place to one side. Add the cream and stock to the rest of the asparagus and cook for a minute. Take of the heat and puree in a blender with salt and pepper.

After blending pour into serving bowl and stir in the whipped cream, arrange the asparagus heads around your bowl and garnish with Parmesan cheese or black pepper. Alternatively buy a packet from your local supermarket; Covent Garden Soup's are great! For a personal touch you can still stir in the whipped cream and season and garnish!

Serve with a chilled glass of White wine and Garlic bread, yum!
