Sexy Skewered Fish
| Ingredients: 2 small Salmon steaks skinned 2 small Trout steaks skinned 8 raw King Prawns 1 Green Pepper 1 Red Pepper 4 cloves of Garlic Olive Oil Black Pepper Cayenne Pepper 1 tsp. Ground Oregano 1 Lemon |

Wash your fish and remove any skin if not skinned. Using a sharp knife chop the heads of your prawns and remove the veins and guts along the top of each one, set to one side. Chop your salmon, trout, green and red pepper into large cubes (remembering these will be pierced on the skewer so they have to be a nice size).
Crush or finely chop 2 cloves of garlic and place in a small bowl with a measure of olive oil, stir in pepper, salt and your Oregano. Pierce all your fish and peppers onto the skewers arranging them in an alternative fashion - prawn, pepper, salmon, pepper, trout, trout, pepper, salmon, pepper, prawn!
Make up 4 skewers. Place all skewers on a baking fray and pour over the olive oil mixture so that each one is completely covered and glistening. Take your left over cloves of garlic and place these on the fray covered in oil too! Grill for 6 minutes turning halfway through cooking. Serve with stuffed peppers, spinach and Garlic Bread. Roasted Garlic cloves to garnish for that ultimate kick!
A glass of chilled white wine would be fantastic with this sexy dish!
